Low Fat Oats,rice,mango and strawberry muffins

I baked these in the oven toaster too. Great for when you are on a diet.

Ingredients

1 tsp baking soda
1/2 cup raw sugar
1/2 tsp salt
3 eggs
1 tsp vanilla essence
1 cup water
1 cup rice flour
1/2 cup instant oats
3 ripe mangos
4 strawberries

Method

Sift the rice flour and baking soda.
Stir in the oats.
Beat the eggs with water and 2 mangos (remove skin and seeds first) in a mixer.
Beat in the sugar and vanilla essence. Cream well
Mix in the flour mixture. 
Chop up the remaining mango and the strawberries and stir into the mixture.
Put a paper cup into each muffin cup.
Put 1 tablespoon of the batter into each cup, cover with aluminium foil and toast for 9 minutes
Test to see if it is cooked. Put a toothpick into a muffin. If it comes out clean, or with crumbs, it is done.

Serving

Serve warm with fruit, jam or honey
